rules. I looked at a block of cheese I had in the fridge which I was sure wouldn't qualify (cheese seems to be one of the more difficult items to buy within the rules so far) but it turned out to only have three ingredients—score!
I'm finding it a bit challenging to do meal planning, but this is nothing new for me. I know I do best when I plan the week's meals ahead of time, so that I can limit shopping trips and maximize efficiency in the kitchen. When I meal plan, I don't find myself standing in the kitchen wondering what I should make for dinner. I also end up cooking a wider variety of foods, because I try to include prep activities and leftover remixes added into the plan: soak beans the night before I'm going to cook them; the leftover chicken from Monday will be used to make enchiladas on Wednesday, etc.
I'm feeling pretty good about how I've been using our food budget for the challenge so far, too. This week, I wrote about some of my food shopping strategies which make it easier to find and buy more whole (few-ingredient) foods while still saving as much money as possible.
I'm excited to be hosting a small crock pot freezer meal prep gathering this weekend at my home. I am hoping that this can become a recurring event that helps me (and the others!) with ease of meal prep as well as eating more whole foods on a day-to-day basis. Having grab-and-go meals in my freezer is one thing I've found that significantly cuts down on us eating outside of the house, which has the result of both saving money and eating more foods that make our bodies feel good. I'll let you know how the gathering goes!
