3 Ingredient Coconut Macaroons

Aside from simply eating a bar of chocolate, these coconut macaroons are probably the easiest dessert recipe I know—they definitely make the top five!

The thing I like most about macaroons is that they taste rich and decadent without being too sweet. My recipe uses honey in place of cane sugar, but I'm curious to know how it would turn out using coconut sugar. If you give it a try, please let me know.

If you're following along with the Six Ingredient Challenge Hobo Mama and I are hosting, these macaroons measure up at only 3 ingredients! (Remember that according to the rules, we exclude salt and other spices in the ingredient count.)


2 ½ cups finely shredded coconut
2 egg whites
¼ cup raw local honey
¼ teaspoon salt (preferably Real Salt or your favorite sea salt)


  • Whisk together egg whites and honey in a medium-sized mixing bowl.
  • Add salt and stir together.
  • Stir in shredded coconut.
  • Put the mixture in the refrigerator to chill for about 30 minutes.
  • Scoop out balls of batter with a spoon and pack them down firmly with your hands before placing on a baking sheet lined with parchment paper. (I made them the right shape by cupping one of my hands and placing the batter in that palm while pressing down with a flat palm with my other hand. You'll get a feel for it as you do it.)
  • Bake at 350°F for about 15 minutes, or until macaroons are golden brown on top.
  • Cool for an hour, then serve to someone you love (you included!).
