Foodie Friday: Nut Flour Cookies

Total credit for this recipe goes to my friend Lori, who very kindly made them for me the last time she was in town (although, I couldn't help but modify the recipe just a little). They are delicious, packed with protein, and healthy, to boot! I've been enjoying these extra since they are totally wheat-free and gluten-free. It's also nice to have a treat that's not too sickeningly sweet. I enjoy the subtle sweetness of honey.

I ended up having a lot of fun making the nut flour that went in these. (Turns out, the sound of the food processor is incredibly soothing to my son!) The process was very simple: put nuts in the food processor, press the button, and watch as the blade pulverizes the nuts into tiny bits. Finished! It took just a bit more than 16 ounces of shelled nuts to make the five cups of nut flour that this recipe calls for.

I will definitely be making these again soon!

You will need:

5 cups nut flour (almonds, pecans, walnuts, peanuts, etc.)
1 cup nut pieces (not ground as fine)
1 cup raisins, craisins, or other dried fruit bits
1 cup unsweetened coconut
½ cup melted butter or margarine
¾ cup honey
¼ cup brown sugar
2 eggs
1 teaspoon baking soda
⅛ teaspoon salt
  • Preheat oven to 350° F.
  • Mix nut flour, extra nuts, coconut, dried fruit, salt, and baking soda together.
  • Mix butter, eggs, and honey, then add to the dry ingredients. 
  • Form into small balls with a spoon or your hands, then flatten. 
  • Bake for 12-15 minutes or until lightly browned.
Note from Lori: I use about half pecans and half almonds for my flour, which produces a cookie that is moist and chewy. Using all pecans or walnuts would produce a sloppy cookie, because those nuts are oily. 

I been using half walnuts, half almonds, and the consistency is just right. I skipped the fruit this time because I forgot to buy it, so I added a little extra coconut to make up for the lack of craisins. The cookies are very tasty either way!
