Foodie Friday: Spinach Artichoke Dip

This is not the light, snacky version of spinach artichoke dip. This is the spinach dip you make if it's what you're having for dinner, or if you're hosting a party. It's substantial. It's hearty. It has multiple cheeses!

Jaymz and I had it for dinner one night—not that I wholly recommend that—but what a delicious dinner it was!

You will need:
8 ounces cream cheese, softened
½ cup sour cream
¼ cup mayonnaise
1 can artichoke hearts (14 ounces), drained
3 cups spinach, chopped
⅓ cup grated Parmesan cheese plus some for the top!
¼ cup grated (or thinly sliced) provolone cheese
½ teaspoon garlic powder
1 teaspoon dried basil
½ teaspoon red pepper flakes
½ teaspoon black pepper
¼ cup mozzarella

Preheat oven to 350° F. Lightly grease a 9x12 baking dish.

In a medium bowl, combine cream cheese, sour cream, mayonnaise, Parmesan cheese, provolone cheese, garlic, basil, garlic powder, red pepper flakes, and black pepper:

Gently stir in artichoke hearts and spinach:

Transfer the mixture to the prepared baking dish. Top with more Parmesan cheese and then mozzarella cheese:

Bake for 25-30 minutes, until bubbly and lightly browned:
We ate ours on yellow and blue corn chips, but it's also great on wedges of pita or naan, bagel chips, a thinly sliced baguette, or chunks of sourdough bread!
