Foodie Friday: Biscuits and Gravy

This is something I craved a lot when I was pregnant. Now, since I'm full-time breastfeeding that same child, my appetite for this breakfast favorite hasn't subsided. I've made it enough times now to feel like I've perfected the recipe fairly well. Try it out and let me know what you think of it!

For the sausage gravy, you'll need:
2 lbs bulk pork sausage (I bought some from the meat counter called "Country Sage Pork Breakfast Sausage" and it was amazing.)
3 cups milk
¼ cup flour
salt and pepper to taste

Brown the sausage in a skillet on medium heat:

When the sausage is sufficiently cooked, do not drain! Stir in the salt, pepper, and flour, 1 Tablespoon at a time, until all the juices are absorbed by the flour and the flour begins to brown.

Slowly add the milk, stirring all the while. Cook down a little, while stirring, until the gravy is thickened:
I whipped up a few quick biscuits by modifying the recipe on the side of the Bisquick box. For a half recipe, I added 1 Tablespoon of butter and ¼ cup of shredded cheese to the mix. It yielded four warm, cheesy biscuits:

I like my biscuits and gravy Denny's-style with a couple of over-easy eggs in the middle and a sprinkle of cheese on top:

  1. I LOVE biscuits and gravy, but I like mine just sort of standard--just the biscuits and gravy. I only make it every once in a while, because I assume it's not very healthy; but boy is it filling!

  5. This is REAL sausage gravy--it actually contains sausage! I adore biscuits and gravy, and have my own recipe that I cherish. It's much like yours, but includes onion (finely chopped). Now I'VE got a craving!!
