Jaymz has figured out that if he buys too many bananas for us to eat in a reasonable time frame, I will make banana bread. So naturally, he's been doing this a lot lately. I've modified this recipe slightly, by substituting brown sugar for some of the white sugar, and messing around with the ratio between the two. 3/4C of sugar is enough if your bananas are very over-ripe or you don't like it as sweet, so you can reduce it to that if you want.
3 or 4 ripe bananas, mashed
1/3C melted butter
3/4C cane sugar
1/4C brown sugar
1 egg, beaten
1 tsp vanilla
1 tsp baking soda
Pinch of salt
1 1/2C all-purpose flour
Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for about 1 hour. [Keep an eye on it in the last 10-15 minutes, it may not take that long depending on your oven.] Cool on a rack. Remove from pan and slice to serve.
I don't have a photo because we always seem to eat it before I have the chance to get out the camera. I think that's probably a good sign!
